🥢 Fresh Prawn Summer Rolls (Makes 24–28 rolls)

These vibrant, hand-rolled bites are packed with fresh herbs, crunchy veggies, and juicy prawns—perfect for sharing with family and friends. Great for a light lunch, dinner party, or picnic!


What You’ll Need

For the Rolls:
  • 200g dried vermicelli or thin rice noodles
  • 500g cooked king prawns, peeled, deveined & roughly chopped
  • 2 baby gem lettuces, finely shredded
  • 4 spring onions, chopped
  • 2 large carrots, peeled & grated
  • A small handful of fresh coriander, chopped (about 4 tbsp)
  • A small handful of Thai basil, chopped (about 4 tbsp)
  • A small handful of mint leaves, chopped (about 4 tbsp)
  • Juice of 2 fresh limes
  • 24–28 round rice paper sheets (around 16cm wide)

For the Dipping Sauce:

  • 4 tbsp caster sugar
  • 4 tbsp rice vinegar
  • 180ml fish sauce
  • 2 red chillies, deseeded & finely chopped
  • 2 garlic cloves, minced or finely chopped
  • 2 spring onions, finely sliced
  • A small handful of coriander, chopped (about 4 tbsp)
  • A small handful of mint, chopped (about 4 tbsp)
