Inspired by the spinach tortillas often seen in grocery stores, I wanted to create a homemade wrap made with broccoli—thin, flexible, and perfect for all kinds of meals. After plenty of testing, I’m thrilled to share this recipe with you!

These broccoli wraps are soft and mild in flavor, making them the perfect base for breakfast burritos, tacos, sandwich wraps, or even savory crepes. The key to success is letting the batter rest for at least 15 minutes. If used too soon, the batter will be too runny to form proper wraps. Resting longer than 15 minutes is perfectly fine—just don’t skip this crucial step!

Ingredients

  • 5 broccoli florets (about 2 cups, chopped)
  • ½ cup water
  • ½ cup whole milk
  • 1 egg
  • ½ teaspoon mixed seasoning (such as Mrs. Dash)
  • ⅛ teaspoon kosher salt
  • ½ cup all-purpose flour
  • ½ teaspoon vegetable oil (for frying)

Instructions

  1. Steam the broccoli: Microwave the florets for about 3 minutes, or until tender.
  2. Blend the base: In a blender, combine broccoli, water, milk, egg, seasoning, and salt. Blend until completely smooth.
  3. Mix the batter: Pour the broccoli purée into a bowl and whisk in the flour until no lumps remain.
  4. Rest the batter: Let the mixture sit for at least 15 minutes to thicken slightly.
  5. Cook the wraps:
    • Brush a nonstick pan lightly with oil and heat over medium.
    • Pour about ½ cup of batter into the pan, spreading it evenly into a thin layer.
    • Cook for 3 minutes, then carefully flip and cook for another 2–3 minutes, until firm but not browned.
  6. Serve: Fill your wraps with your favorite fillings and enjoy warm!
