Fresh Prawn Summer Rolls

🥢 Fresh Prawn Summer Rolls (Makes 24–28 rolls)
These vibrant, hand-rolled bites are packed with fresh herbs, crunchy veggies, and juicy prawns—perfect for sharing with family and friends. Great for a light lunch, dinner party, or picnic!
What You’ll Need
For the Rolls:
- 200g dried vermicelli or thin rice noodles
- 500g cooked king prawns, peeled, deveined & roughly chopped
- 2 baby gem lettuces, finely shredded
- 4 spring onions, chopped
- 2 large carrots, peeled & grated
- A small handful of fresh coriander, chopped (about 4 tbsp)
- A small handful of Thai basil, chopped (about 4 tbsp)
- A small handful of mint leaves, chopped (about 4 tbsp)
- Juice of 2 fresh limes
- 24–28 round rice paper sheets (around 16cm wide)
For the Dipping Sauce:
- 4 tbsp caster sugar
- 4 tbsp rice vinegar
- 180ml fish sauce
- 2 red chillies, deseeded & finely chopped
- 2 garlic cloves, minced or finely chopped
- 2 spring onions, finely sliced
- A small handful of coriander, chopped (about 4 tbsp)
- A small handful of mint, chopped (about 4 tbsp)
