Homemade Beef Enchiladas

Ingredients
- 1 pound lean ground beef
- 1 small onion, chopped
- 1 (1.5-ounce) package dry enchilada sauce mix
- 10 (10-inch) flour tortillas
- 2 cups shredded Cheddar cheese, divided
- 1 (2.25-ounce) can sliced black olives, drained
Instructions
- Preheat oven to 350°F (175°C).
- Cook the beef and onion:
In a medium skillet over medium-high heat, cook the ground beef and chopped onion until the beef is browned and the onion is tender. Drain excess fat if needed. - Prepare the sauce:
Follow the package directions to make the enchilada sauce. Pour about ¼ cup of the sauce into the bottom of a 9×13-inch baking dish. - Assemble the enchiladas:
Spoon equal portions of the beef mixture and about 1 ounce of cheese onto each tortilla (save about ½ cup of cheese for topping). Roll each tortilla tightly and place it seam-side down in the baking dish. - Top and bake:
Pour the remaining enchilada sauce evenly over the rolled tortillas. Sprinkle with the reserved cheese and top with sliced olives. - Bake:
Bake for about 20 minutes, or until the sauce is bubbly and the cheese is melted. - Serve:
Garnish as desired and serve warm with your favorite sides. Enjoy!
